Philly Cheese Chicken Sandwich

This Philly Cheese Chicken Sandwich is a delicious twist on the classic Philly cheesesteak, made with tender chicken, sautéed peppers and onions, and melted cheese.

Ingredients

  • Dijon mustard - 1 tablespoon
  • Mayonnaise - 2 tablespoons
  • Hoagie rolls - 2
  • Provolone cheese - 4 slices
  • Salt and pepper - To taste
  • Onion - 1, thinly sliced
  • Green bell pepper - 1, thinly sliced
  • Olive oil - 2 tablespoons
  • Chicken breasts - 2 boneless, skinless

Instructions

  1. Preheat the grill or stovetop grill pan over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for 6-8 minutes per side, or until cooked through.
  4. Remove the chicken from the grill and let it rest for a few minutes.
  5. While the chicken is resting, heat the olive oil in a skillet over medium heat.
  6. Add the sliced bell pepper and onion to the skillet and sauté until softened and slightly caramelized, about 5-7 minutes.
  7. Slice the chicken breasts into thin strips.
  8. Split the hoagie rolls in half and spread mayonnaise and Dijon mustard on the bottom halves.
  9. Layer the sliced chicken, sautéed peppers and onions, and provolone cheese on top of the bottom halves of the rolls.
  10. Place the sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  11. Remove from the broiler and place the top halves of the rolls on the sandwiches.
  12. Serve hot and enjoy!
