Pesto Chicken Sandwich

This delicious pesto chicken sandwich is packed with flavor and perfect for a quick and satisfying meal.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Basil leaves - Handful
  • Fresh mozzarella cheese - 4 slices
  • Tomato - 1, sliced
  • Ciabatta bread - 1 loaf, sliced
  • Pesto sauce - 4 tablespoons
  • Chicken breast - 2 boneless, skinless

Instructions

  1. Preheat the grill or a grill pan over medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-8 minutes per side, or until cooked through.
  4. While the chicken is grilling, brush the sliced ciabatta bread with olive oil and toast on the grill for a few minutes on each side.
  5. Spread pesto sauce on one side of each toasted ciabatta slice.
  6. Place a grilled chicken breast on top of the pesto sauce on one slice of bread.
  7. Top the chicken with tomato slices, fresh mozzarella cheese, and basil leaves.
  8. Cover with the other slice of bread, pesto side down.
  9. Press the sandwich together gently.
  10. Slice the sandwich in half and serve.
