Grilled Portobello Mushroom and Basil Sandwich

This grilled sandwich features juicy portobello mushrooms marinated in balsamic vinegar and topped with fresh basil leaves.

Ingredients

  • Arugula - 1 cup
  • Tomato - 1, sliced
  • Mozzarella cheese - 4 slices
  • Ciabatta bread - 4 slices
  • Basil leaves - 8-10 leaves
  • Salt and pepper - To taste
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Portobello mushrooms - 2 large

Instructions

  1. Preheat the grill or grill pan over medium heat.
  2. Clean the portobello mushrooms and remove the stems.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  4. Brush the marinade onto both sides of the portobello mushrooms.
  5. Grill the mushrooms for about 4-5 minutes per side, or until tender and grill marks appear.
  6. Remove the mushrooms from the grill and let them cool slightly.
  7. Assemble the sandwiches by layering basil leaves, grilled portobello mushrooms, mozzarella cheese, tomato slices, and arugula between the ciabatta bread slices.
  8. Place the sandwiches on the grill or grill pan and cook for 2-3 minutes on each side, or until the cheese is melted and the bread is toasted.
  9. Remove from heat and serve hot.
