Leek and Mushroom Stir Fry

This flavorful stir fry combines leeks and mushrooms with a savory sauce for a delicious and healthy meal.

Ingredients

  • Toasted sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)
  • Salt and pepper - To taste
  • Cooking oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 teaspoon
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Leeks - 2 medium, sliced

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, cornstarch, and water to make the sauce.
  2. Heat cooking oil in a large skillet or wok over medium-high heat.
  3. Add the leeks and mushrooms to the skillet and stir fry for 5-6 minutes, until they start to soften.
  4. Add the minced garlic and grated ginger to the skillet and stir fry for another 1-2 minutes.
  5. Pour the sauce over the vegetables in the skillet and stir fry for an additional 2-3 minutes, until the sauce thickens and coats the vegetables.
  6. Season with salt and pepper to taste.
  7. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
  8. Serve hot with steamed rice or noodles.
