Ingredients

  • Salt and pepper - To taste
  • Eggs - 4, separated
  • Pastrami - 1 cup, chopped
  • Swiss cheese - 1 cup, grated
  • Milk - 1 cup
  • Flour - 2 tablespoons
  • Butter - 2 tablespoons

Instructions

  1. Preheat the oven to 375°F.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour until smooth.
  3. Gradually add the milk, stirring constantly until thickened.
  4. Remove from heat and stir in the cheese until melted. Stir in the pastrami.
  5. Beat the egg yolks until thick and lemon colored. Stir into the cheese mixture.
  6. In another bowl, beat the egg whites until stiff peaks form. Fold into the cheese mixture.
  7. Pour into a greased 1-1/2-qt. soufflé dish. Bake for 40-45 minutes or until the soufflé is puffed and golden brown.
  8. Serve immediately.
