Pastrami and Asparagus Frittata

Ingredients

  • Cheddar cheese - 1/2 cup, shredded
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Asparagus - 1 cup, chopped
  • Pastrami - 1 cup, chopped
  • Eggs - 6 large

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. Heat the olive oil in a large, oven-safe skillet over medium heat.
  4. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the pastrami and asparagus and cook for another 5 minutes.
  6. Pour the egg mixture over the pastrami and asparagus in the skillet.
  7. Sprinkle the shredded cheese on top.
  8. Transfer the skillet to the oven and bake for 10 minutes, or until the frittata is set and the cheese is melted and bubbly.
  9. Let the frittata cool for a few minutes before slicing and serving.
