Country Potato and Asparagus Frittata

A hearty and delicious frittata packed with potatoes, asparagus, and cheese. Perfect for a weekend brunch or a quick weeknight dinner.

Ingredients

  • Salt and pepper - To taste
  • Cheddar cheese - 1 cup, shredded
  • Milk - 1/4 cup
  • Eggs - 6 large
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Asparagus - 1 bunch, trimmed and cut into 1-inch pieces
  • Potatoes - 2 medium, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Preheat the oven to 400°F.
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Add the potatoes and cook until golden and crispy, about 10 minutes.
  4. Add the asparagus, onion, and garlic and cook until the vegetables are tender, about 5 minutes.
  5. In a large bowl, whisk together the eggs, milk, half of the cheese, salt, and pepper.
  6. Pour the egg mixture over the vegetables in the skillet and stir to combine.
  7. Sprinkle the remaining cheese on top.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the frittata is set and the cheese is melted and bubbly.
  9. Let the frittata cool for a few minutes before slicing and serving.
