Parsnip and Avocado Guacamole

A unique twist on traditional guacamole, this recipe combines the creaminess of avocado with the earthy sweetness of parsnips.

Ingredients

  • Tortilla chips - For serving
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Garlic - 1 clove, minced
  • Jalapeno - 1 small, seeded and finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Red onion - 1/4 cup, finely chopped
  • Lime juice - 2 tablespoons
  • Avocado - 2 ripe, peeled and pitted
  • Parsnips - 2 medium, peeled and diced

Instructions

  1. Bring a pot of water to a boil. Add the diced parsnips and cook until tender, about 10 minutes. Drain and let cool.
  2. In a bowl, mash the avocados with a fork until smooth.
  3. Add the cooked parsnips, lime juice, red onion, cilantro, jalapeno, garlic, salt, and black pepper to the mashed avocados. Mix well to combine.
  4. Taste and adjust the seasoning if needed.
  5. Serve the parsnip and avocado guacamole with tortilla chips.
