Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Balsamic vinaigrette dressing - 1/4 cup
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed greens - 4 cups
  • Breadcrumbs - 1 cup
  • Egg - 1, beaten
  • Parmesan cheese - 1 cup, grated
  • Chicken tenders - 1 lb

Instructions

  1. Preheat the oven to 400°F.
  2. Season the chicken tenders with salt and pepper.
  3. In a shallow dish, combine the grated Parmesan cheese and breadcrumbs.
  4. Dip each chicken tender into the beaten egg, then coat it in the Parmesan breadcrumb mixture, pressing gently to adhere.
