Ingredients

  • Orange slices - For garnish
  • Maple syrup - For serving
  • Orange juice - 1/4 cup
  • Butter - 2 tablespoons, melted
  • Molasses - 2 tablespoons
  • Orange zest - 1 tablespoon
  • Egg - 1
  • Milk - 1 cup
  • Salt - 1/4 teaspoon
  • Ground nutmeg - 1/2 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the milk, egg, orange zest, molasses, melted butter, and orange juice.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the pancakes warm with maple syrup and garnish with orange slices.
