Gingerbread Pancakes

These fluffy gingerbread pancakes are perfect for a cozy breakfast or brunch during the holiday season.

Ingredients

  • Maple syrup - For serving
  • Vanilla extract - 1 teaspoon
  • Unsalted butter, melted - 2 tablespoons
  • Egg - 1
  • Molasses - 1/4 cup
  • Milk - 1 cup
  • Salt - 1/4 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  2. In a separate bowl, whisk together the milk, molasses, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the gingerbread pancakes warm with maple syrup.
