Orange and Beet Salad

This refreshing salad combines the sweetness of oranges with the earthiness of beets for a vibrant and flavorful dish.

Ingredients

  • Salt and pepper - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Mixed greens - 4 cups
  • Oranges - 2 large, peeled and segmented
  • Beets - 2 medium, roasted and sliced

Instructions

  1. Preheat the oven to 400°F.
  2. Wrap the beets in aluminum foil and roast for 45 minutes, or until tender. Let cool, then peel and slice.
  3. In a large bowl, combine the mixed greens, roasted beets, orange segments, red onion, goat cheese, and walnuts.
  4. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
  5. Drizzle the dressing over the salad and toss to combine.
  6. Serve immediately and enjoy!
