Fig and Orange Salad

This refreshing salad combines the sweetness of figs with the tanginess of oranges for a delightful flavor combination.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Mixed greens - 4 cups
  • Oranges - 2
  • Fresh figs - 4

Instructions

  1. Wash and dry the figs and oranges. Cut the figs into quarters and slice the oranges into segments.
  2. In a large bowl, combine the mixed greens, sliced red onion, crumbled goat cheese, and chopped walnuts.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper to make the dressing.
  4. Add the figs and oranges to the salad bowl and drizzle with the dressing.
  5. Toss gently to combine all the ingredients.
  6. Serve immediately and enjoy!
