Fava Bean and Tomato Bruschetta

This delicious bruschetta is made with fresh fava beans, ripe tomatoes, and crusty bread.

Ingredients

  • Baguette - 1, sliced
  • Salt and pepper - To taste
  • Balsamic vinegar - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Fava beans - 1 cup, shelled

Instructions

  1. Bring a pot of water to a boil and blanch the fava beans for 2 minutes. Drain and rinse with cold water.
  2. Remove the outer skin from the fava beans by gently squeezing them. Set aside.
  3. In a bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well.
  4. Add the shelled fava beans to the tomato mixture and toss to combine.
  5. Preheat the oven to 400°F.
  6. Place the baguette slices on a baking sheet and brush with olive oil. Toast in the oven for 5-7 minutes, or until golden brown.
  7. Remove the toasted baguette slices from the oven and let them cool slightly.
  8. Top each slice with the fava bean and tomato mixture.
  9. Serve immediately and enjoy!
