Ojingeo Bokkeum

Ojingeo Bokkeum is a popular Korean dish made with stir-fried squid and vegetables in a spicy sauce.

Ingredients

  • Green onions - 2 stalks, chopped, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Sesame oil - 1 tablespoon
  • Sugar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Gochujang (korean red pepper paste) - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Bell pepper - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Onion - 1 medium, thinly sliced
  • Squid - 500 grams, cleaned and sliced

Instructions

  1. In a bowl, mix together gochujang, soy sauce, sugar, and sesame oil to make the sauce.
  2. Heat some oil in a large pan or wok over medium-high heat.
  3. Add the sliced squid and stir-fry for 2-3 minutes until cooked.
  4. Remove the squid from the pan and set aside.
  5. In the same pan, add a little more oil if needed and sauté the onion, carrot, bell pepper, and garlic until they are slightly softened.
  6. Add the cooked squid back to the pan and pour the sauce over the ingredients.
  7. Stir-fry everything together for another 2-3 minutes until the sauce coats the squid and vegetables evenly.
  8. Garnish with sesame seeds and chopped green onions.
  9. Serve hot with steamed rice.
