Japchae Bokkeum

Japchae Bokkeum is a delicious Korean stir-fried noodle dish made with sweet potato noodles, vegetables, and marinated beef.

Ingredients

  • Salt and pepper - To taste
  • Sesame seeds - 1 tablespoon
  • Green onions - 4, chopped
  • Mushrooms - 4 ounces, sliced
  • Onion - 1, thinly sliced
  • Spinach - 2 cups
  • Carrot - 1, julienned
  • Garlic - 3 cloves, minced
  • Sugar - 1 tablespoon
  • Sesame oil - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Beef sirloin - 8 ounces, thinly sliced
  • Sweet potato noodles - 8 ounces

Instructions

  1. Cook the sweet potato noodles according to package instructions. Drain and set aside.
  2. In a bowl, combine the beef, soy sauce, sesame oil, sugar, and minced garlic. Let it marinate for 10 minutes.
  3. Heat a large pan or wok over medium-high heat. Add the marinated beef and stir-fry until cooked through. Remove from the pan and set aside.
  4. In the same pan, add a bit more sesame oil if needed. Stir-fry the carrot, spinach, onion, and mushrooms until tender.
  5. Add the cooked sweet potato noodles and the cooked beef back to the pan. Stir-fry for a few more minutes to combine all the flavors.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions and sesame seeds.
  8. Serve hot and enjoy!
