Nectarine Salad

This refreshing nectarine salad is a perfect combination of sweet and tangy flavors.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Red onion - 1/4 cup, thinly sliced
  • Walnuts - 1/4 cup, chopped
  • Goat cheese - 1/4 cup, crumbled
  • Mixed greens - 4 cups
  • Nectarines - 2, ripe and sliced

Instructions

  1. In a large bowl, combine the mixed greens, nectarines, goat cheese, walnuts, and red onion.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Serve immediately and enjoy!
