Mushroom Curry

This flavorful mushroom curry is made with a blend of spices and creamy coconut milk.

Ingredients

  • Cooking oil - 2 tablespoons
  • Fresh cilantro - For garnish
  • Salt - To taste
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Curry powder - 2 teaspoons
  • Coconut milk - 1 can (400 ml)
  • Tomatoes - 2 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Mushrooms - 500 grams, sliced

Instructions

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add the minced garlic and grated ginger. Cook for another minute.
  4. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  5. Add the chopped tomatoes and cook until they soften.
  6. In a small bowl, mix together the curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
  7. Add the spice mixture to the pan and stir well to coat the mushrooms and tomatoes.
  8. Pour in the coconut milk and bring the curry to a simmer. Cook for 10-15 minutes, allowing the flavors to meld together.
  9. Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
