Fish Curry

This flavorful fish curry is made with a blend of spices, coconut milk, and tender fish fillets.

Ingredients

  • Cooking oil - 2 tablespoons
  • Fresh cilantro - For garnish
  • Salt - To taste
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Coconut milk - 1 can (400ml)
  • Tomatoes - 2 medium, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Fish fillets - 500 grams

Instructions

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the chopped onion and cook until golden brown, about 5 minutes.
  3. Add the minced garlic and grated ginger. Cook for another 2 minutes.
  4. Add the chopped tomatoes and cook until they soften, about 5 minutes.
  5. In a small bowl, mix together the curry powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.
  6. Add the spice mixture to the pan and cook for 2 minutes, stirring constantly.
  7. Pour in the coconut milk and bring to a simmer.
  8. Gently add the fish fillets to the pan, making sure they are submerged in the curry sauce.
  9. Cover the pan and let the fish cook for about 10-15 minutes, or until cooked through and flaky.
  10. Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
