Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Dijon mustard - 1 tablespoon
  • Walnuts - 1/4 cup, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Mushrooms - 8 ounces, sliced
  • Baby spinach - 4 cups

Instructions

  1. In a large bowl, combine the baby spinach, mushrooms, red onion, cherry tomatoes, feta cheese, and walnuts.
  2. In a small bowl, whisk together the Dijon mustard, lemon juice, olive oil, honey, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss to coat evenly.
