Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Dried cranberries - 1/4 cup
  • Walnuts - 1/4 cup, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Cucumber - 1/2, sliced
  • Cherry tomatoes - 1 cup, halved
  • Red onion - 1/4 cup, thinly sliced
  • Spinach - 2 cups, chopped
  • Carrots - 2 medium, grated

Instructions

  1. In a large bowl, combine the grated carrots, chopped spinach, red onion, cherry tomatoes, cucumber, feta cheese, walnuts, and dried cranberries.
  2. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
