Mushroom and Bean Burrito

This delicious vegetarian burrito is filled with sautéed mushrooms, black beans, and flavorful spices.

Ingredients

  • Cilantro - 2 tablespoons, chopped
  • Salsa - 1/2 cup
  • Avocado - 1, sliced
  • Tortillas - 2 large
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Black beans - 1 can, drained and rinsed
  • Mushrooms - 8 ounces, sliced

Instructions

  1. Heat some oil in a skillet over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent.
  3. Add the sliced mushrooms and cook until they are tender and browned.
  4. Add the black beans, cumin, chili powder, salt, and pepper. Stir well to combine and cook for another 5 minutes.
  5. Warm the tortillas in a separate skillet or in the oven.
  6. Divide the mushroom and bean mixture evenly among the tortillas.
  7. Top with sliced avocado, salsa, and chopped cilantro.
  8. Roll up the tortillas tightly, tucking in the sides as you go.
  9. Serve the burritos warm and enjoy!
