Vegetarian Burritos

These delicious vegetarian burritos are filled with a flavorful combination of vegetables, beans, and spices.

Ingredients

  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Salsa - 1/2 cup
  • Avocado - 1, sliced
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Corn - 1 cup
  • Zucchini - 1, diced
  • Onion - 1, thinly sliced
  • Bell peppers - 2, thinly sliced
  • Black beans - 1 can, drained and rinsed
  • Tortillas - 4 large

Instructions

  1. Heat a tablespoon of oil in a large skillet over medium heat.
  2. Add the bell peppers, onion, zucchini, and corn. Cook until the vegetables are tender, about 5-7 minutes.
  3. Add the black beans, cumin, chili powder, salt, and pepper. Stir well to combine and cook for another 2-3 minutes.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Place a spoonful of the vegetable and bean mixture onto each tortilla.
  6. Top with sliced avocado, salsa, and chopped cilantro.
  7. Squeeze fresh lime juice over the filling.
  8. Fold the sides of the tortilla over the filling, then roll it up tightly.
  9. Serve the vegetarian burritos warm and enjoy!
