Moroccan Harira Soup

Harira is a traditional Moroccan soup made with lentils, chickpeas, tomatoes, and aromatic spices.

Ingredients

  • Water - 4 cups
  • Salt and pepper - To taste
  • Cayenne pepper - 1/4 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Lemon - 1, juiced
  • Parsley - 1/4 cup, chopped
  • Cilantro - 1/4 cup, chopped
  • Tomato paste - 2 tablespoons
  • Tomatoes - 1 can, diced
  • Chickpeas - 1 can, drained and rinsed
  • Red lentils - 1 cup
  • Carrot - 2, diced
  • Celery - 2 stalks, diced
  • Garlic - 3 cloves, minced
  • Onion - 1, finely chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the lentils, chickpeas, tomatoes, tomato paste, cilantro, parsley, lemon juice, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Stir to combine.
  4. Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the lentils are tender.
  5. Taste and adjust the seasoning if needed.
  6. Serve hot and enjoy!
