Chorba is a traditional Algerian soup made with lamb, vegetables, and aromatic spices.
Ingredients
Water - 6 cups
Olive oil - 2 tablespoons
Salt and pepper - To taste
Cayenne pepper - 1/2 teaspoon
Paprika - 1 teaspoon
Cumin - 1 teaspoon
Turmeric - 1 teaspoon
Parsley - 1/4 cup, chopped
Cilantro - 1/4 cup, chopped
Chickpeas - 1 cup, cooked
Tomatoes - 2, chopped
Potatoes - 2, diced
Carrots - 2, diced
Garlic - 3 cloves, minced
Onion - 1 large, finely chopped
Lamb meat - 500 grams, cubed
Instructions
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the cubed lamb meat and cook until browned on all sides.
Add the diced carrots, potatoes, and chopped tomatoes. Stir well.
Add the cooked chickpeas, chopped cilantro, and parsley. Mix everything together.
In a small bowl, combine the turmeric, cumin, paprika, cayenne pepper, salt, and pepper. Mix well.
Sprinkle the spice mixture over the ingredients in the pot. Stir to coat everything evenly.
Pour in the water and bring the soup to a boil.
Reduce the heat to low, cover the pot, and let the chorba simmer for about 45 minutes, or until the lamb is tender and the vegetables are cooked through.
