Moroccan Spiced Lentil Soup

This Moroccan spiced lentil soup is packed with warm and aromatic flavors, perfect for a comforting meal.

Ingredients

  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 1/4 cup, chopped
  • Salt and pepper - To taste
  • Ground cinnamon - 1/2 teaspoon
  • Ground turmeric - 1/2 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Vegetable broth - 4 cups
  • Canned diced tomatoes - 1 can (14 oz)
  • Red lentils - 1 cup
  • Garlic - 3 cloves, minced
  • Celery - 2 stalks, diced
  • Carrot - 2, diced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrot, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the lentils, diced tomatoes, vegetable broth, cumin, coriander, turmeric, cinnamon, salt, and pepper. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
  5. Remove from heat and stir in the fresh cilantro and lemon juice.
  6. Serve hot and enjoy!
