Grilled mollejas, also known as sweetbreads, are a delicious and tender delicacy. This recipe features marinated mollejas grilled to perfection.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Cayenne pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Mollejas (sweetbreads) - 1 pound

Instructions

  1. Place the mollejas in a bowl and pour the lemon juice over them. Let them soak for 10 minutes.
  2. In a separate bowl, mix together the minced garlic, olive oil, salt, black pepper, paprika, cayenne pepper, and chopped parsley to make the marinade.
  3. Remove the mollejas from the lemon juice and pat them dry with paper towels.
  4. Coat the mollejas with the marinade, making sure they are evenly coated.
  5. Preheat the grill to medium-high heat.
  6. Grill the mollejas for about 5-7 minutes per side, or until they are nicely browned and cooked through.
  7. Remove the mollejas from the grill and let them rest for a few minutes before serving.
