Ingredients

  • Salt and pepper - To taste
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cucumbers - 1 large, diced
  • Tomatoes - 2 medium, diced
  • Eggplant - 1 large, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the eggplant slices with olive oil and season with salt and pepper.
  3. Grill the eggplant slices for 2-3 minutes per side, until tender and lightly charred. Remove from the grill and let cool.
  4. In a large bowl, combine the grilled eggplant, tomatoes, cucumbers, red onion, feta cheese, and parsley.
