Couscous Salad

This couscous salad is a refreshing and healthy dish that is perfect for a summer day.

Ingredients

  • Salt and pepper - To taste
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1/2, diced
  • Tomatoes - 2, diced
  • Cucumber - 1, diced
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Water - 1 cup
  • Couscous - 1 cup

Instructions

  1. Bring the water to a boil in a medium saucepan.
  2. Add the couscous and remove from heat. Cover and let sit for 5 minutes.
  3. Fluff the couscous with a fork and transfer to a large bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper.
  5. Add the cucumber, tomatoes, red onion, feta cheese, and parsley to the couscous.
  6. Pour the dressing over the couscous and toss to combine.
  7. Serve chilled.
