This refreshing marinated vegetable salad is packed with colorful veggies and tossed in a tangy vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Garlic - 2 cloves, minced
  • Dijon mustard - 1 tablespoon
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 1/4 cup
  • Fresh parsley - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Olives - 1/2 cup, pitted
  • Red onion - 1/2, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Cucumbers - 2, thinly sliced
  • Bell peppers - 1 red, 1 yellow, 1 green, thinly sliced

Instructions

  1. In a large bowl, combine the bell peppers, cucumbers, cherry tomatoes, red onion, olives, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
