This refreshing salad combines crisp green beans, crispy bacon, and a tangy vinaigrette dressing.
Ingredients
Salt and pepper - To taste
Olive oil - 1/4 cup
Red wine vinegar - 2 tablespoons
Dijon mustard - 1 tablespoon
Fresh parsley - 2 tablespoons, chopped
Feta cheese - 1/2 cup, crumbled
Cherry tomatoes - 1 cup, halved
Red onion - 1/4 cup, thinly sliced
Bacon - 6 slices, cooked and crumbled
Green beans - 1 pound, trimmed
Instructions
Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
In a large bowl, combine the cooked green beans, crumbled bacon, red onion, cherry tomatoes, feta cheese, and fresh parsley.
In a small bowl, whisk together the Dijon mustard, red wine vinegar, olive oil, salt, and pepper to make the vinaigrette dressing.
Pour the dressing over the salad and toss to coat evenly.
