Pasta Salad

This refreshing pasta salad is packed with colorful vegetables and tossed in a tangy vinaigrette dressing.

Ingredients

  • Salt and pepper - To taste
  • Garlic - 1 clove, minced
  • Dijon mustard - 1 teaspoon
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Black olives - 1/4 cup, sliced
  • Red onion - 1/4 cup, thinly sliced
  • Bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Pasta - 8 ounces

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, and fresh basil.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta salad and toss to coat evenly.
  5. Refrigerate for at least 1 hour to allow the flavors to meld together.
  6. Serve chilled and enjoy!
