Mango Shrimp

This delicious mango shrimp dish combines the sweetness of mangoes with the savory flavors of shrimp and spices.

Ingredients

  • Cooking oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Honey - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Mango - 1 large, diced
  • Shrimp - 1 lb, peeled and deveined

Instructions

  1. In a bowl, combine the soy sauce, honey, lime juice, minced garlic, grated ginger, and chopped cilantro. Set aside.
  2. Heat the cooking oil in a large skillet over medium-high heat.
  3. Add the diced onion and red bell pepper to the skillet and sauté until they start to soften, about 3-4 minutes.
  4. Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 2-3 minutes per side.
  5. Pour the sauce mixture over the shrimp and vegetables in the skillet. Stir well to coat everything evenly.
  6. Add the diced mango to the skillet and gently stir to combine.
  7. Cook for an additional 1-2 minutes, until the mango is heated through.
  8. Season with salt and pepper to taste.
  9. Serve the mango shrimp over steamed rice or with a side of your choice.
