Linguine with Mussels and Chorizo

A delicious combination of linguine pasta, mussels, and spicy chorizo sausage, all tossed in a flavorful tomato sauce.

Ingredients

  • Salt and pepper - To taste
  • Parsley - 1/4 cup, chopped
  • Mussels - 2 pounds, cleaned and debearded
  • Canned diced tomatoes - 1 can (14.5 ounces)
  • White wine - 1 cup
  • Red pepper flakes - 1/2 teaspoon
  • Garlic - 3 cloves, minced
  • Chorizo sausage - 1/2 pound, sliced
  • Olive oil - 2 tablespoons
  • Linguine - 1 pound

Instructions

  1. Cook the linguine according to the package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook until browned, about 5 minutes.
  3. Add the garlic and red pepper flakes to the skillet and cook for another minute.
  4. Pour in the wine and diced tomatoes. Bring the mixture to a simmer.
  5. Add the mussels to the skillet. Cover and cook until the mussels have opened, about 5-7 minutes.
  6. Discard any mussels that did not open.
  7. Add the cooked linguine to the skillet and toss to combine with the sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with the chopped parsley before serving.
