Seafood Medley Linguine

A delightful mix of shrimp, scallops, and clams tossed with linguine in a light and zesty tomato sauce.

Ingredients

  • Salt and pepper - To taste
  • Parsley - 1/4 cup, chopped
  • Tomatoes - 2 cups, diced
  • White wine - 1 cup
  • Clams - 1 pound, in shell
  • Scallops - 1/2 pound
  • Shrimp - 1 pound, peeled and deveined
  • Red pepper flakes - 1/2 teaspoon
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Linguine - 1 pound

Instructions

  1. Cook the linguine according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until fragrant, about 1 minute.
  3. Add the shrimp, scallops, and clams to the skillet. Cook until the shrimp are pink and the clams have opened, about 5 minutes.
  4. Add the wine to the skillet and bring to a simmer. Cook for 5 minutes, or until the wine has reduced by half.
  5. Add the tomatoes to the skillet and cook until they are soft, about 5 minutes.
  6. Add the cooked linguine to the skillet and toss to combine. Cook for 2-3 minutes, or until the pasta is heated through.
  7. Season with salt and pepper to taste. Garnish with the chopped parsley before serving.
