Linguine with Avocado Sauce

A creamy, rich pasta dish that's also healthy, thanks to the avocado. Perfect for a quick weeknight dinner.

Ingredients

  • Basil leaves - A handful, chopped
  • Parmesan cheese - 1/2 cup, grated
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves
  • Avocados - 2, ripe
  • Linguine - 8 ounces

Instructions

  1. Cook the linguine according to the package instructions.
  2. While the pasta is cooking, make the avocado sauce. In a food processor, combine the avocados, garlic, lemon juice, olive oil, and salt and pepper. Process until smooth.
  3. Drain the pasta, reserving some of the pasta water.
  4. Return the pasta to the pot and add the avocado sauce. Toss to combine, adding some of the reserved pasta water if needed to thin the sauce.
  5. Serve the pasta topped with the grated Parmesan cheese and chopped basil.
