Keto Stuffed Bell Peppers

These keto stuffed bell peppers are filled with a flavorful mixture of ground beef, cauliflower rice, and cheese.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Shredded mozzarella cheese - 1 cup
  • Salt and pepper - To taste
  • Italian seasoning - 1 teaspoon
  • Tomato sauce - 1/2 cup
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Cauliflower rice - 1 cup
  • Ground beef - 1 pound
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  4. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  5. Stir in the cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  6. Fill each bell pepper with the ground beef mixture and place them in a baking dish.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and sprinkle the shredded mozzarella cheese on top of each stuffed pepper.
  9. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
