These Keto Philly Cheesesteak Stuffed Peppers are a low-carb twist on the classic Philly cheesesteak sandwich. Tender steak, sautéed onions, and melted cheese are stuffed into bell peppers for a delicious and satisfying meal.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Provolone cheese - 4 slices
  • Green bell pepper - 1, thinly sliced
  • Onion - 1 large, thinly sliced
  • Ribeye steak - 1 pound, thinly sliced
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the sliced onions and green bell pepper to the skillet and sauté until softened, about 5 minutes.
  5. Push the onions and peppers to one side of the skillet and add the sliced steak to the other side.
  6. Cook the steak until browned, about 3-4 minutes per side.
  7. Season with salt and pepper to taste.
  8. Divide the steak, onions, and peppers evenly among the bell peppers.
  9. Top each stuffed pepper with a slice of provolone cheese.
  10. Place the stuffed peppers on a baking sheet and bake for 15-20 minutes, or until the cheese is melted and bubbly.
