This keto-friendly chicken piccata is a delicious and low-carb version of the classic Italian dish.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Butter - 2 tablespoons
  • Capers - 2 tablespoons
  • Lemon juice - 1/4 cup
  • Chicken broth - 1 cup
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Almond flour - 1/2 cup
  • Chicken breasts - 4 boneless, skinless

Instructions

  1. In a shallow dish, combine almond flour, salt, and black pepper.
  2. Dredge the chicken breasts in the almond flour mixture, shaking off any excess.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add minced garlic and cook for 1 minute.
  7. Add chicken broth, lemon juice, and capers to the skillet.
  8. Bring the mixture to a simmer and cook for 2-3 minutes, until slightly reduced.
  9. Stir in butter until melted and well combined.
  10. Return the chicken breasts to the skillet and cook for an additional 2-3 minutes, until cooked through.
  11. Garnish with fresh parsley before serving.
