These flavorful grilled chicken kebabs are perfect for a summer barbecue or a quick weeknight dinner.

Ingredients

  • Skewers - 8, soaked in water
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into 1-inch pieces
  • Bell peppers - 2, cut into 1-inch pieces
  • Chicken breast - 1.5 lbs, cut into 1-inch cubes

Instructions

  1. In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper to make the marinade.
  2. Add the chicken cubes to the marinade and toss to coat. Let it marinate in the refrigerator for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, bell peppers, red onion, and cherry tomatoes onto the soaked skewers.
  5. Grill the kebabs for about 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  6. Serve the grilled chicken kebabs hot with your favorite dipping sauce or a side of rice.
