Kalguksu

Kalguksu is a traditional Korean noodle soup made with handmade knife-cut noodles and a flavorful broth.

Ingredients

  • Black pepper - To taste
  • Green onions - 2, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1, thinly sliced
  • Carrot - 1, julienned
  • Zucchini - 1, julienned
  • Chicken breast - 1, cooked and shredded
  • Chicken broth - 6 cups
  • Water - 1/2 cup
  • Salt - 1/2 teaspoon
  • All - purpose flour - 2 cups

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, salt, and water. Knead the dough until smooth and elastic. Let it rest for 30 minutes.
  2. Roll out the dough on a floured surface until thin. Cut the dough into thin strips to make the noodles.
  3. Bring a pot of water to a boil and cook the noodles for about 5 minutes, or until tender. Drain and set aside.
  4. In a large pot, heat the chicken broth over medium heat. Add the shredded chicken, zucchini, carrot, onion, and garlic. Cook for about 10 minutes, or until the vegetables are tender.
  5. Add the cooked noodles to the pot and stir in the soy sauce and sesame oil. Season with black pepper to taste.
  6. Simmer for another 5 minutes to allow the flavors to meld together.
  7. Serve hot, garnished with chopped green onions.
