Jicama and Broccoli Slaw

This refreshing and crunchy slaw is made with jicama, broccoli, and a tangy dressing.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 large, grated
  • Broccoli - 2 cups, finely chopped
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, broccoli, carrot, red bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, honey, olive oil, salt, and pepper.
  3. Pour the dressing over the slaw and toss to coat evenly.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
  5. Serve chilled and enjoy!
