Jicama and Beet Salad

This refreshing salad combines the crispness of jicama with the earthy sweetness of beets.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Beets - 2 medium, roasted and diced
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, roasted beets, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad marinate in the refrigerator for at least 30 minutes before serving.
