Jicama and Apple Slaw

This refreshing and crunchy slaw is made with jicama, apples, and a tangy dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Apple - 2 medium, cored and julienned
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, apple, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper.
  3. Pour the dressing over the jicama mixture and toss to coat evenly.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled and enjoy!
