Indian Palak Paneer with Mushrooms

This flavorful Indian dish combines spinach (palak) with paneer cheese and mushrooms, cooked in a rich and aromatic sauce.

Ingredients

  • Fresh cilantro - For garnish
  • Fresh cream - 2 tablespoons
  • Oil - 2 tablespoons
  • Salt - To taste
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Tomato - 2 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Mushrooms - 200 grams, sliced
  • Paneer cheese - 200 grams, cubed
  • Spinach - 500 grams

Instructions

  1. Blanch the spinach in boiling water for 2 minutes. Drain and transfer to a blender. Blend until smooth to make spinach puree.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onion and sauté until golden brown.
  4. Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
  5. Add chopped tomatoes and cook until they turn soft and mushy.
  6. Add turmeric powder, coriander powder, and garam masala. Mix well.
  7. Add sliced mushrooms and cook for 5 minutes, until they release their moisture.
  8. Add the spinach puree and mix well. Cook for 5 minutes.
  9. Add cubed paneer cheese and salt. Stir gently to combine.
  10. Cover the pan and simmer for 10 minutes, allowing the flavors to meld together.
  11. Stir in fresh cream and cook for another 2 minutes.
  12. Garnish with fresh cilantro and serve hot with rice or naan bread.
