Huevos Rancheros Burrito

This delicious Huevos Rancheros Burrito combines the flavors of a classic Mexican breakfast with the convenience of a handheld burrito.

Ingredients

  • Olive oil - 1 tablespoon
  • Salt and pepper - To taste
  • Cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 1/2 cup, shredded
  • Avocado - 1, sliced
  • Salsa - 1/4 cup
  • Black beans - 1/2 cup, cooked
  • Eggs - 4
  • Flour tortillas - 2 large

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Crack the eggs into the skillet and season with salt and pepper. Cook until the whites are set but the yolks are still runny, about 3 minutes.
  3. Warm the flour tortillas in a separate skillet or in the microwave.
  4. Spread the black beans onto the tortillas.
  5. Place a cooked egg on top of the beans on each tortilla.
  6. Top with salsa, avocado slices, shredded cheddar cheese, and chopped cilantro.
  7. Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
