Curry and Potato Breakfast Burrito

This flavorful breakfast burrito is filled with curry-spiced potatoes, scrambled eggs, and a variety of toppings.

Ingredients

  • Salt and pepper - To taste
  • Cilantro - 2 tablespoons, chopped
  • Salsa - 1/4 cup
  • Sour cream - 1/4 cup
  • Cheddar cheese - 1/2 cup, shredded
  • Tortillas - 2 large
  • Eggs - 4
  • Olive oil - 1 tablespoon
  • Curry powder - 1 tablespoon
  • Potatoes - 2 medium, diced

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes and curry powder to the skillet. Cook until potatoes are tender and lightly browned, about 10 minutes.
  3. In a separate bowl, whisk the eggs with salt and pepper.
  4. Push the potatoes to one side of the skillet and pour the whisked eggs into the other side. Scramble the eggs until cooked through.
  5. Warm the tortillas in a separate skillet or in the microwave.
  6. Divide the potato and egg mixture evenly between the tortillas.
  7. Top with shredded cheddar cheese, sour cream, salsa, and chopped cilantro.
  8. Fold the tortillas into burritos and serve hot.
