Grilled Veggie and Hummus Wrap

This delicious grilled veggie and hummus wrap is packed with flavorful vegetables and creamy hummus, all wrapped in a warm tortilla.

Ingredients

  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Baby spinach - 1 cup
  • Hummus - 1/2 cup
  • Tortillas - 2 large
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Red onion - 1/2, sliced
  • Yellow squash - 1, sliced
  • Zucchini - 1, sliced
  • Bell peppers - 1 red, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the sliced bell peppers, zucchini, yellow squash, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables for 5-7 minutes, or until they are tender and slightly charred.
  4. Warm the tortillas on the grill for about 30 seconds on each side.
  5. Spread a generous amount of hummus on each tortilla.
  6. Layer the grilled vegetables, baby spinach, cucumber, and tomato on top of the hummus.
  7. Roll up the tortillas tightly, tucking in the sides as you go.
  8. Slice the wraps in half and serve.
