Ingredients

  • Skewers - 4
  • Salt and pepper - To taste
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Basil leaves - 1/4 cup, chopped
  • Red onion - 1, cut into chunks
  • Bell peppers - 1, cut into chunks
  • Zucchini - 1, sliced
  • Cherry tomatoes - 1 cup
  • Halloumi cheese - 8 ounces, cut into cubes

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the olive oil, lemon juice, chopped basil, salt, and pepper.
  3. Thread the halloumi cheese, cherry tomatoes, zucchini, bell peppers, and red onion onto the skewers.
