Grilled or Roasted Tomatoes

These grilled or roasted tomatoes are bursting with flavor and make a delicious side dish or topping for various dishes.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh basil - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomatoes - 4 large, ripe

Instructions

  1. Preheat the grill or oven to medium-high heat.
  2. Slice the tomatoes in half horizontally and remove the seeds.
  3. In a small bowl, mix together the olive oil, minced garlic, chopped basil, salt, and black pepper.
  4. Brush the cut side of each tomato half with the olive oil mixture.
  5. Place the tomatoes cut side down on the grill or a baking sheet if roasting.
  6. Grill or roast the tomatoes for about 10 minutes, or until they are slightly charred and softened.
  7. Remove from the grill or oven and let them cool for a few minutes.
